Fresh Peach Salad

This peach salad celebrates the arrival of fresh peaches and blueberries and is packed with flavour.

Ingredients

1 cup fresh blueberries

4 peeled, diced and pitted ripe peaches

2 peeled, pitted and diced avocados

4 cups chopped romaine lettuce

1 cup chopped pecans

¼ cup chopped fresh mint leaves

½ a thinly sliced red onion

225g mini mozzarella balls

Vinaigrette

½ tsp sugar

1/2tsp onion powder

3tbsp white balsamic vinegar

1/3 cup olive oil

2tsp Dijon mustard
