Grilled Peach Salad with Basil Vinaigrette
This grilled peach salad is a refreshing and vibrant dish, perfect for summer. The sweetness of the peaches pairs beautifully with the tangy basil vinaigrette, while the creamy avocado and salty feta add a delicious contrast.
Ingredients:
- 4 ripe peaches, halved and pitted
- 1 tablespoon olive oil
- 120g mixed salad greens (baby spinach, rocket, etc.)
- 100g feta cheese, crumbled
- 60g walnuts, toasted
- 1 avocado, sliced
- 1 small cucumber, thinly sliced
Basil Vinaigrette:
- 1/4 cup extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1/4 cup fresh basil leaves, finely chopped
- Salt and pepper to taste
Method:
- Preheat your grill or BBQ to medium heat. Brush the peach halves with olive oil.
- Place the peaches on the grill, cut side down, and cook for 3-4 minutes, until grill marks form and the peaches are slightly softened. Remove and allow them to cool slightly before slicing.
- In a large bowl, toss the mixed salad greens with cucumber, feta, and toasted walnuts.
- For the vinaigrette, whisk together olive oil, balsamic vinegar, lemon juice, Dijon mustard, garlic, and basil. Season with salt and pepper.
- Arrange the grilled peach slices and avocado on top of the salad. Drizzle with the basil vinaigrette.
- Serve immediately and enjoy!
