Grilled Peach Salad with Basil Vinaigrette

This grilled peach salad is a refreshing and vibrant dish, perfect for summer. The sweetness of the peaches pairs beautifully with the tangy basil vinaigrette, while the creamy avocado and salty feta add a delicious contrast.

Ingredients:

  • 4 ripe peaches, halved and pitted
  • 1 tablespoon olive oil
  • 120g mixed salad greens (baby spinach, rocket, etc.)
  • 100g feta cheese, crumbled
  • 60g walnuts, toasted
  • 1 avocado, sliced
  • 1 small cucumber, thinly sliced

Basil Vinaigrette:

  • 1/4 cup extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/4 cup fresh basil leaves, finely chopped
  • Salt and pepper to taste

Method:

  1. Preheat your grill or BBQ to medium heat. Brush the peach halves with olive oil.
  2. Place the peaches on the grill, cut side down, and cook for 3-4 minutes, until grill marks form and the peaches are slightly softened. Remove and allow them to cool slightly before slicing.
  3. In a large bowl, toss the mixed salad greens with cucumber, feta, and toasted walnuts.
  4. For the vinaigrette, whisk together olive oil, balsamic vinegar, lemon juice, Dijon mustard, garlic, and basil. Season with salt and pepper.
  5. Arrange the grilled peach slices and avocado on top of the salad. Drizzle with the basil vinaigrette.
  6. Serve immediately and enjoy!
