Korean Beef Ramen
There’s something incredibly satisfying about a bowl of homemade ramen. This version is packed with rich, savoury flavours, tender beef, fresh vegetables and perfectly cooked noodles, making it a comforting meal that’s surprisingly easy to prepare. It’s ideal for cooler evenings or whenever you’re craving something warm, hearty and full of flavour.
Ingredients
- 2 packets instant ramen noodles (discard seasoning sachets)
- 300g beef mince
- 2 cloves garlic, crushed
- 2 tsp grated fresh ginger
- 2 tbsp soy sauce
- 1 tbsp gochujang (Korean chilli paste)
- 1 tbsp sesame oil
- 750ml beef stock
- 200g mushrooms, sliced
- 1 carrot, julienned
- 2 cups baby spinach
- 2 spring onions, sliced
- 2 soft-boiled eggs
- Sesame seeds, to serve
Method
- Heat the sesame oil in a large saucepan over medium-high heat. Add the beef mince and cook until browned, breaking it up with a spoon.
- Stir in the garlic and ginger and cook for 1 minute until fragrant.
- Add the soy sauce and gochujang, stirring to coat the beef.
- Pour in the beef stock and bring to a gentle simmer.
- Add the mushrooms and carrot, cooking for 4–5 minutes until just tender.
- Add the ramen noodles and cook according to the packet instructions.
- Stir through the baby spinach until just wilted.
- Divide between bowls and top with the soft-boiled eggs, spring onions and a sprinkle of sesame seeds.
Rich, warming and packed with flavour, this Korean-inspired ramen is easy to customise with your favourite vegetables or protein. Add extra chilli if you enjoy a little heat, or finish with a drizzle of chilli oil for an extra kick.
