Vegetarian Tikka Skewers
Quick and easy to make, these tasty tikka skewers will please vegetarians and carnivores alike and are great for the upcoming barbecue season.
Ingredients
500g plain yoghurt
250g small new potatoes
2tsp cumin seeds
3tbsp tikka paste
300g cubed paneer cheese
Thumb-sized piece of finely grated fresh ginger
2 deseeded red peppers, cut into chunks
3 peeled red onions, cut into wedges
5tbsp mango chutney
12 chapatis
250g bag salad leaves
Small pack mint leaves
Instructions
- Soak 12 wooden skewers in water for half an hour. Mix tikka paste, cumin, ginger, seasoning and half the yoghurt in a large bowl. Boil potatoes for 7 minutes, drain and add to tikka mixture with the paneer. Carefully mix and chill for 2 hours for flavours to develop.
- Assemble kebabs, alternately threading paneer, potatoes, onions and peppers and cover kebabs until ready to cook.
- Heat grill or barbecue. Mix mint into salad leaves and mango chutney into remaining yoghurt. Grill kebabs for 10-15 minutes, cooking until vegetables are softened and slightly charred. Towards the end of the cooking time, warm chapatis on the grill. Serve kebabs with warmed chapatis, minty salad and mango yoghurt and let everyone assemble their own wraps.
